The ROU philosophy

A richer everyday.

From green beans to the cup, at our roastery in Tamba-Sasayama. We work with the seasons and direct fire to develop the depth of our dark-roast coffee.

Beyond the cup

House-roasted coffee, at the roastery café.

At ROU, we roast our own coffee beans and serve the coffee in the same place. The person who roasted the beans brews your cup and shares the thought behind it. That conversation is part of what makes a roastery café special.

Direct-fire roasting. Dark-roast coffee.

We adjust each roast to the day’s temperature and humidity, bringing out the depth of the beans through direct-fire dark roasting. Behind the flavour is a roaster paying close attention to the air and the beans, every day.

Choosing beans and brewing, with the roaster.

Whether you love dark roasts or want to try something different, tell the roaster about the flavours you enjoy and the equipment you use at home. Explore how to enjoy your coffee with the person who knows its roast, from a cup at the café to your everyday brewing.

Choose your roaster. Discover your coffee.

Know the maker. Discover more in the cup.

What was the roaster hoping to bring out? Why this dark roast? At ROU, you can ask the person who made it. Our roaster brews your cup and shares the choices behind the flavour. Knowing a little more makes time with coffee richer—an experience we hope you’ll carry into your own cup at home.

Meet the roaster behind ROU

The making of coffee.

Depth doesn’t
happen by chance.

01CHARGING & DRYING

It begins with heat.

Each roast begins with attention to the day’s temperature and humidity. Heat moves into the green beans and moisture leaves. At ROU, roasting starts with the air around us.

02YELLOWING & BROWNING

Aroma takes shape.

Green gives way to yellow, then brown. Reactions including the Maillard reaction develop the color and aroma we associate with coffee.

03CRACK & DEVELOPMENT

Developing depth.

The beans expand with heat, making the sound known as a crack. Roasting continues toward ROU’s dark roast, using direct fire to bring out the depth of the beans.

04RELEASE, COOLING & BREWING

From fire to cup.

The roasted beans are released and cooled. Discover what comes next in the cup, at the café that shares our roasting space.

OUR AMBITION

To enrich your coffee time
more than anyone
in the world.

That is the collective of roasters we aspire to become. Roasting, brewing and sharing the stories behind each cup—at the café and at home. Helping coffee bring more pleasure to everyday life.
